On Tuesday BlogHer co-founded and dedicated vegan Elisa Camahort shared her thoughts on World Vegetarian Day, including reasons she became a vegetarian. I'm not a vegetarian, but I eat vegetarian meals more than half the time, so I was interested to see how my favorite vegetarian food blogs might mark the day on Wednesday.
And of course, as Elisa reminded us, October 1 also kicked off the Vegan Month of Food or VeganMoFo, where vegan bloggers will be posting delicious offerings every day for the entire month. I found some veggie blogs mentioned World Vegetarian Day, while others went right into a month of celebrating, but a lot of tasty recipes were being posted for both occasions.
Green Lemonade gave options for breakfast, lunch, and dinner, including delicious-sounding Lentil Burgers.

Show Me Vegan kicks off the month with a Tofu Scramble, which she describes as being the gateway to veganism for her. (Pictured above)
Although he's not a vegetarian, Mark Bittman has written one of the best vegetarian cookbooks I've seen in his How to Cook Everything Vegetarian. It seems fitting that on his blog he posted Another Route to Good Vegetable Stock on World Vegetarian Day, don't you think?
Jennywenny from Foray Into Food celebrated the day with Vegan Leek and Onion Quiche.

Susan at Fat Free Vegan Kitchen was really up for the occasion with a fantastic post featuring step-by-step direction about Making Tofu, and Susan's give-away for a soymilk maker generated hundreds of comments. (That's Susan's homemade tofu pictured above.)
Treehugger doesn't have any recipes, but they do have a lot of good information about how eating less meat is good for you and good for the planet.
Keen on Quinoa suggests that of course, this is a good day to try some new recipes for quinoa, what else!

Cupcake Punk has tasty looking vegan Cashew Butter Cookies (pictured above).
Finally Orzo Almond Salad from The Innocent Primate Vegan Blog looks like a great dish to celebrate with.
Kalyn Denny writes about food and at BlogHer.com and shares her passion for cooking at Kalyn's Kitchen. If you want to find even more vegetarian recipes ideas, she suggests entering the recipe you're looking for into Food Blog Search, then refine the search by choosing "vegetarian blogs."

Even though I doubt I'll ever be a vegetarian, the recipes are often so much more interesting than just cooking a hunk of meat.

I second that!!
Yeah, I noticed that my cooking repertoire expanded when I became vegetarian (and you know, I never thought I'd become a vegetarian), and then exponentially expanded when I became vegan (again, said I'd never do that..but here I am). I think people think vegans are so deprived of good food is because most people don't realize that with all the veggies out there, you can create almost an infinite number of combinations with various grains and spices. I think it's possible to do that with meat, but you have to be much more creative in order to obtain the variety you can easily get with a vegan diet. So yeah, even if you don't think you'll ever be vegetarian, eating vegetarian (or better yet, vegan) is one step closer to improving your health and your planet!
And thanks for the props on the Orzo Almond Salad! It turned out super yummy, and sure to please veggie's and omni's alike!
