Pumpkin Cake

Happy birthday to me! If I was going to have a birthday cake, which I'm not, I'd be happy with a pumpkin cake. Not one shaped like a pumpkin or frosted in orange goo, just one that tastes like pumpkin and nutmeg. As someone smartly commented in the Pumpkin Spice Latte thread, it is the nutmeg that is the "crack".

Alanna's Thanksgiving cake would be good. It's a little like TW's Witchy Poo Cake that I really really like. I can, however, guarantee you that I will never eat Alanna's pumpkin fruit cake. Fruit cake makes me queasy, even if it has pumpkin in it.

I don't generally like frosting or icing on cakes but this pumpkin cake with caramel icing looks really good to me. Sorry we missed this drawing for a free cookbook but the recipe looks good, apples, spices and pumpkin - yum! This is interesting, pumpkin and yellow cake mix. I also don't love chocolate but have to admit, this is a pretty pound cake.

Okay so it's your birthday so for this one day you can get away with being slightly picky.But starting tomorrow, when I'll bake you ANY CAKE YOU WANT, the whole idea is that "You don't have to like it, but you do have to try it." Even fruitcake, even fruitcake with pumpkin.

I don't like these types of cakes. Pumpkin, carrot, zucchini... not thanks.

But I had to stop by and say HAPPY BIRTHDAY. you don't seem to be making enough of a big deal out of your SPECIAL DAY.

I'm celebrating, I swear

I actually celebrated all weekend (and took two days off of work, sort of) by having five of the six kids here. And Joy brought me presents and my mom sent me presents.

Now what is it about pumpkin cakes that you don't like? Is it the nutmeg, say it isn't the nutmeg.

When I make pumpkin cake I do a slab of cream cheese mixed with honey for the frosting. The original recipe I saw called for a 50/50 ratio, but I like it less sweet so I do it to taste. NOM!

I'd rather not have any frosting, really. Sweet or not. I'll eat a cake with frosting but I won't enjoy it as much.

Forgo the baking- Walmart has an AWESOME Pumpkin Cream cake. I love the honey idea, even a honey glaze would be yummy.  I was thinking a maple glaze.

Up here in Wisconsin ay'

Up here in Wisconsin ay' Walmarts bakery make the best specialty cakes.  I don't know if this is the case at all Walmarts.  Usally they are right up front so you don't have to go through the whole mammoth store.  Although after you eat your cake going back and walking the store to burn off calories isn't a bad idea!

One time I asked my sister what she had for dinner, she said a Walmart cake, "It was so good, I said just one more piece.  The next thing I know it was gone!"

Those are far too much work for me but I think they're gorgeous and this one sounds pretty darn good (except for the walnuts. I hate walnuts.)
