Cooking a healthy dinner can be a challenge any day of the year, but what if it's Valentine's Day and the person you're cooking for is a Vegan? No worries, Susan at Fat Free Vegan Kitchen has it covered for you.

Susan challenged her readers to come up with a healthy Valentine's Day dinner that featured vegetables, was vegan, and was low in fat. More people than you might imagine rose to the challenge.
